ORYXBLOG

He takes us into his processing room where he shows us how he scoops carefully measured salt into the custom-designed wire-mesh wooden trays. The trays are then taken into the smoker and fitted into racks. Outside the smoke ovens, hang hessian bags of sawdust. Sean gets most of his sawdust from a local bespoke furniture manufacturing business. There’s Applewood, Oak, Beech and Candlewood from Knysna.

THE HISTORY OF THE SMOKE HOUSE

HISTORYBLOG

Our Smoke house was build in a Traditional method. There is a lot more to mastering the art of smoking any food product than just having a smoker or smoke house. The ovens have to be tried and tested. There are hot spots in any oven and it is very important to know and understand your oven before you can perfect the smoking process. This is done by trial and error. After building our oven we spent many hours testing the oven and learning how it works. This is an intricate part of perfecting the process. Only once the oven is mastered and understood can you then begin to work together with the oven to create a unique product. This means that when you buy one of our products you are not only buying something we have mastered but you are also receiving the love we put into building the oven and the hours spent mastering the process. We know that this makes a big difference. If food is prepared with love it is able to give love back to the person eating it. In a nut shell there is a lot more to making food that looks, smells and tastes great and intention is the key to success.

We hosted Justin Binello and his Braaimaster Team in July at the Aphrodisiac Shack Smokehouse in July for the epic semi-final of the second season. The team of sixty talented crew and the eight contestants left arrived for the semi final challenge. We had heard very little about the shooting of the series but had followed the first season with great interest.
